Mandarin Orange Cake Yummmy


for the cake
1 box yellow cake mix
1-2 cup of vegetable
4 large eggs
1 - 12 or 16 ounce - can of mandarin oranges undrained

for the frosting
1 pack of instant vanilla pudding
1 - 20 ounce  - can of crushed pineapple
1 - 18 ounce - cool Whip


preheat oven to 360 butter 3 - 7 inch cake pans
add the cake mix oil and eggs to the bowl of a mixer and mix on low until blended reserve a couple of the oranges for garnish add the remaining oranges with their juice then mix well
divide evenly into the 3 prepared cake pans and bake at 360 for about 25 to 30 minutes let cool in the pan for 20 minutes then turn out onto a cake rack to cool completely
blend together cool whip instant pudding and crushed pineapple
frost cake add the other layer and finish frosting top and sides garnish the top with reserved orange segments
