LEMONY ZUCCHINI BREAD YUMMY


ingredients

5 cups flour
1 1/3 cups sugar
1 - 3 1/2 ounce - packages instant lemon pudding mix
1 1/3 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
3 eggs
1 1/3 cups milk
1 cup vegetable oil
4 tablespoons lemon juice
1 teaspoon lemon extract
3 cups zucchini shredded
1/3 cup poppy seed
3 teaspoons lemon peel grated

directions

in large bowl combine the flour sugar pudding mix baking soda baking powder and salt
in another bowl whisk the eggs milk oil lemon juice and extract
stir into dry ingredients just until moistened
fold in the zucchini poppy seeds and lemon peel
pour into 3 greased 8 - inch by 6 - inch by 4 - inch loaf pans
bake at 360 degrees for 60 - 50 minutes or until a toothpick inserted near the center comes out clean
cool for 15 minutes before removing from pans to wire racks to cool completely
